GAUCHO´S DINNER!
In our menu card, we have typical Argentine courses. In which we maintain the same cooking processes that the Gauchos did more than 150 years ago.We create a classic atmosphere of Argentine countryside cuisine and its customs.

POLLO AL DISCO (CHICKEN COOKED AT THE IRON WOK)
Recipe:
Portions: 5-6
Timing: 60 min.
Ingredients: 12
● ¼ chicken per person. (1 complete chicken and a half)
● 3 large carrots
● 1k potato
● 2 white onion
● 1 red bell pepper
● ½ head of garlic
● 3 cups 250 cc. of broth
● 2 bay leaves
● 1 lt of blonde beer
● ½ l of heavy cream
● Seasonings (salt, pepper, y teaspoon of dried thyme)
● 100 cc. sunflower oil
● 6 Portobello mushrooms
Tools:
• Wok (preferably made of iron)
• Small bowl
• Firewood
• Knife
• Cutting board
Recipe steps:
– Start the fire with the firewood and heat the wok, very hot. (If you don’t have fireplace you can do it over the gas burner).
– Chop the chicken in the different parts of it. ( breast in two pieces, wings, legs )
– Add 100cc. of sunflower oil from the outside to the inside of the wok.
– Brown the chicken pieces on highest heat for about 5 minutes on each side. Remove them and set aside in a bowl. Pour the oil that remained in the wok.
– Peel and cut the onion, garlic and bell pepper in cubes of 2 cm, the carrot into slices. Put the vegetables in the wok and sauté for 5 minutes.
– Add the beer and pepper, let it reduce for 5 minutes.
– When the alcohol evaporates, add 1 cup of chicken broth and stir. Add reserved chicken and cook 10 minutes or until carrot is moderately tender.
– Then add the peeled potatoes cut into 1 cm thick slices, add the remaining broth and cream, the Portobello mushrooms, cover and let cook for another 15 to 20 minutes.
– Season with salt and thyme 5 minutes before the end of cooking.
